In need of some Friday night dinner ideas? I got you.
Yep, you guessed it. My wild and crazy Friday night has consisted of refilling our Glad Scented Plug-ins, fixing a broken cabinet door (okay I did that earlier, but still), cooking dinner for the fam-bam, and now – blogging about that exact dinner.
Yes, I’ve definitely been told I’m out of control. Watch out, world. If things keep up the way they are, chances are I’ll be in bed by 9:00. (One can only hope).
But truth be told the Funderburks tend to get into a rut. All three of us could very easily (and often do) eat the same exact meal every single day. Which hey, that’s great for consistency, but a real pain in the you-know-what when we all start to get sick of that meal after the 5th month.
So tonight, I decided to get inspired and switch things up a bit.
The result? A new meal that will go into the rotation for us to get sick of 5 months from now. But hey.. that buys me 5 more months before I have to get creative in the kitchen again, right? #win.
Friday Night Dinner Ideas: Spicy Chicken Stirfry

I’m honestly not a huge fan of chicken (unless it’s a chicken thigh, a wing, or covered in a lot of batter) – but I’m also getting pretty dang sick of ground beef and ground turkey, and the boys can only handle so much cooked-fish-smell in our house. So tonight, I figured why not try to spice things up a bit?
A friend of mine recently told me about this spicy honey she orders from Amazon (ugh I sound so salesy, don’t I?! I promise this isn’t sponsored!) So naturally I had to order it and see if it was good. End result: totally good.
Keep in mind, I wanted this meal to be fast. Which means minimal prep, minimal cook, minimal clean up (minimal for me because the boys are cleaning up tonight).
Here’s how I made my family’s new favorite meal: Spicy Honey Chicken Stirfry
- 2 pounds chicken tenders
- 1-2 bags of 90 second microwave rice
- 1 bag steamer veggies (I actually used two – a broccoli and a green beans)
- Mike’s Hot Honey
- Garlic salt
- Spray a big skillet with cooking spray
- Add in the chicken and also spray over the tops lightly with cooking spray
- Season with garlic salt (I actually used a Himalayan garlic salt and black pepper combo)
- Cover and cook on medium heat, turning over after about 5 minutes.
- While the chicken is cooking, pop a steamer bag of veggies in the microwave for about 5-5 1/2 minutes
- After the steamers are finished, pop in your microwave rice for 90 seconds (yes, you can cook actual rice but that takes FOREVER and I’ve been known to burn it before, so..)
- When your chicken reaches an internal temp of 165 degrees F, it’s done.
So typically I’d mix everything together and let simmer for a few minutes to let the flavors soak in. But.. I’m currently in a cut so I’m tracking my macros pretty closely, which means I weighed out my portions before mixing together to ensure I had the right amounts. Just letting you know this because I think for future, mixing everything together would make this meal even more delicious.
Once you have your servings portioned, drizzle with Mike’s Hot Honey per your liking. We ended up getting the mild, so it’s not super spicy, but I can’t handle a ton of spice so definitely see what your taste buds prefer before going crazy.
The end result? Deliciousness.
My servings: 6 ounces chicken, 1/2 bag of Uncle Ben’s whole grain brown rice (the boys had white rice), 50g broccoli, 0.5 tbsp honey.
Nutrition information for my serving size: 374 calories, 50.2g carbs, 38.1g protein, 4.5g fat
Bonus option: you can even turn this into a low carb stirfry by subbing the regular rice for cauliflower rice.
